Flank steak is flat, thin and very flavorful Is less tender but also more economical than other cuts, as well as having a nice beefy flavor. Works best in spicier dishes, such as fajitas. Flank Steak benefits from a tenderizing marinade (chimichurri?!) and is great grilled or broiled. Cut thinly across the grain to promote tenderness.
