Ordering your beef in bulk of a whole, half, or quarter animal is a great way to buy quality organic, grass fed beef for a discount and to guarantee a good supply of meat in your freezer for a year or up to 18 months!

Question: Is ordering in bulk appropriate for me?
Bulk orders can be for anyone! but you can consider a few things when ordering in bulk. Size of your family, freezer space, how much beef you consume, if you like entertaining, and if you like to eat different cuts of beef. Because it is a great way to buy quality beef for a discount, you can always "split" your bulk order with family members, friends, or neighbors.

The bigger your order, the cheapest it is! But please note:
*Volume discounts are available provided that the order, deposit, and final payment are under one name.
Please handle splits between individuals internally amongst your participants.
Question: What is "Hanging Weight"?
Hanging weight is the weight of the beef as it hangs on the butcher's cooler after head, hide, feet, organs, and blood are removed. This is the weight used for calculating the price of your beef. A half is approximately 290lbs, and a quarter about 145lbs.
Question: How much boxed beef is in a 1/2 steer? 1/4 steer?
In a 1/2 beef steer you would get about 180lbs of beef, and for a quarter about 90lbs. Mind you, sometimes it's more, sometimes less. It really varies by animal!
Question: What exact cuts do I get?
An example of which cuts and how much you would get for a quarter beef steer is as follows, but remember it will vary by animal AND by cutting instructions. Double these amount for an approximate of a half steer, and multiply by 4 for a whole beef..
Ground Beef – 30 lbs (in 30- 1lb packages)
Stew meat – 3 lbs (in 3- 1lb packages)
Short Ribs – 7 lbs (in 2-3 packages)
Sirloin Tip – 2 lbs (1 pack)
Chuck Roast – 6lbs (2 packages)

Round steaks- 5lbs (in 2-3 packages)
Brisket – 2.5 lbs (1 package)

Question: How much (approximately) are processing costs?
You are responsible for processing costs at the butcher. Those are between $300 and $350 for a half and between $150 to $175 for a quarter- depending on animal weight, processor, and your cutting instructions (some things, for example burger patties, cost a little extra).
Question: How much (approximately) will be my TOTAL cost?
An estimate for a half beef:
-290lbs Hanging weight x $5.25/lb= $1,522.50 (this includes the reservation deposit)
-Processing cost= $325
-Total= $1,847.50
An estimate for a quarter beef:
-145lbs Hanging weight x $5.50/lb= $797.50 (this includes reservation deposit)
-Processing costs= $170
-Total= $967.50
Question: How much freezer space will I need?
A quarter beef steer will take about 3-4 cubic ft. freezer space, and 6-8 cubic ft. for a half steer.
Question: Once I order, when will my beef be ready for pick up?
In the deposit/reservation page, it says when the next available beef will be harvested and also an estimate of when it will be ready for pick up. Please refer to that page for the information.

Ordering is easy:
- Reserve- You need to reserve in advance by placing a non-refundable reservation deposit of $250 through our online store. This deposit will be deducted from your final invoice when your beef is ready.
- Provide cutting Instructions- While your beef is dry aging, our processor (Lake Geneva Country Meats or Wilson Farm Meats) will give you a call to go through cutting instructions. Don't worry! This is an easy process and an opportunity for you to choose exactly what you want. Both the folks at LGCM and Wilsons are great at walking you through the process and asking you the right questions. Also, here is a "Beef Cutting Instruction Form" that helps with understanding the different choices you may have. You are also welcome to ask us for recommendations and we'd be happy to give you some guidance depending on what you like, cooking varieties and methods, etc..
- Pick up your beef- After this, your beef should be ready within a week and you pick it up directly at our processor. At pick up you will need to pay the butcher the "processing fees".
- Pay your final invoice- Around this time you will receive our final invoice for the beef.and instructions on payment.
