Chuck roasts are cut from well-developed, heavily-exercised muscles from the forequarter. They are best braised (moist heat, slow cooking to soften and tenderize them) and have a wonderful, robust beefy flavor- moist, juicy, and when braised will have a nice melting tenderness. These are bone-in for best flavor!
