Hanging Weight Explained:
Hanging weight (or dressed weight) is the weight of the lamb as it hangs on the butcher's cooler after head, hide, feet, organs, and blood are removed. This is the weight used for calculating the price of your lamb, as well as processing costs at our butcher. A half is average 25lbs, and a whole lamb average of 50lbs.
How much boxed lamb is in a 1/2? or a whole ?:
In a 1/2 lamb you would get between 15-20lbs of lamb meat, and for a whole about 30- 40lbs. Of course, it really varies by animal and its hanging weight.
Sample Cuts You Take Home:
An example of which cuts and how much you would get for a half lamb is as follows, but remember it will vary by animal AND by your cutting instructions. Double these amounts for an approximate of a whole lamb.
A standard HALF lamb includes:
1 Rack of Lamb (8 ribs)
4 Loin chops (2 pkgs of 2 chops)
2 Leg shanks
1 Leg roast
1 Shoulder roast
2 lbs Ground Lamb
Processing Costs:
You are responsible for processing costs at the butcher. This is the current pricing list for our processor, Lake Geneva Country Meats. Total estimated cost is about $130 for a whole lamb- depending on animal weight, and your cutting instructions.
Approximate Total Cost of Your Whole Lamb:
An estimate for a whole lamb:
-50lbs Hanging weight x $9.75/lb= $487.50 (this includes the reservation deposit)
-Processing cost= $130
-Total= $617.50
An estimate for a half lamb:
-25lbs Hanging weight x $9.75/lb= $243.75 (this includes reservation deposit)
-Processing costs= $75
-Total= $318.75
Freezer Space:
For a whole lamb, you will need about 2 cu. ft of freezer space; for a half lamb, about 1 cu.ft of freezer space.

The Process:
- Reserving Your Half or Whole Lamb- You need to reserve in advance by placing a non-refundable reservation deposit of $200 through our online store. This deposit will be deducted from your final invoice when your lamb is ready.
- Providing Cutting Instructions- Animals go to harvest in December, just after the grazing season, and around that time, our processor (Lake Geneva Country Meats) will give you a call to go through cutting instructions. Don't worry! This is an easy process and an opportunity for you to choose exactly what you want. The folks at LGCM are great at walking you through the process and asking you the right questions. Also, here is a "Lamb Cutting Instructions Form" that helps with understanding the different choices you may have.
- Picking up your Meat at the Processor After this, your lamb should be ready within a week or two and you pick it up directly at our processor. At pick up, you are responsible for "processing fees" at Lake Geneva Country Meats, based on your instructions. Here are LGCM Processing Fees for lamb.
- Paying your final invoice- Around this time, you will receive our final invoice for the lamb, per hanging weight, and instructions on payment by check, Paypal, Venmo, or Zelle.
